Simmer milk in a heavy-bottomed pan, stirring continuously, until reduced by one-third. This takes about 30–40 minutes.
Use a wide pan for faster evaporation. Stir constantly to prevent a skin from forming and scorching at the bottom.
In a separate small pan, caramelize the sugar over medium heat until it turns deep amber. Immediately add a splash of warm milk to stop cooking, then pour this caramel into the reduced milk. Stir well.
The caramel gives mishti doi its characteristic brown color and smoky-sweet depth — don't rush the caramelization.
Let the milk cool to body temperature (warm to the touch but not hot — about 40°C). Whisk in the yogurt starter until smooth.
If the milk is too hot, it kills the live cultures and the doi won't set. Too cool and it sets too slowly with uneven texture.
Pour into individual earthenware bowls (or ceramic ramekins). Cover with plastic wrap and place in a warm oven at 50°C for 5–6 hours.
An oven with just the light on is often warm enough. Consistent, gentle warmth is the secret.
Once set (it should jiggle like firm jelly when shaken), refrigerate for at least 2 hours before serving.
Chilling it overnight produces the most creamy, set texture. Serve directly in the pot.
